Will my account work with the stand-alone version of ESO if I originally bought it on Steam?

It works okay for me for Skyrim and Oblivion. That's not a definitive answer, but it should.

If I'm not mistaken, ESO doesn't even use the Steam client. It's just used to purchase it. So you should be able to run ESO without the Steam Client running.

I'm not sure however it may be the case that if you purchased it via Steam the game is installed in the Steam directory in your programs folder and therefore Steam may launch when you launch ESO. You may be able to get around this if you were required to create a separate ESO account. You could uninstall ESO from you Steam directory, log into your ESO Account and redownload it from there.

If you are happy with Steam but for some reason don't want the Overlay being active when playing ESO you can disable this on a game by game basis.

Edit: In re-reading your initial question, if you are asking if you can log in to your account on a non Steam version, then yes. If you are on another computer that is using the independent version your login details will still work.

I have a love/hate relationship with Steam. So sometimes I want to dump it, install the native version of an MMO, and just play without it. It sounds like I can if I want to B) Currently I like Steam.
