This new NPC guild, which is made up of hunters, archers and rangers, will lead you on a series of quests to hunt down and kill rare and legendary beasts scattered throughout Tamriel. The main antagonist of the quest line would be centered around the cult of Hircine, the Daedric Prince of the Hunt.

On this quest line, you can expect to fight lycanthropy-infected creatures such as Wereboars, Werebears, and Werelions or the creatures of the forest, namely Minotaurs. You can also expect to get contracts to kill monsters that are terrorizing towns or hunting down an extremely rare unicorn (which might take weeks to find in-game).

The Hunters Guild Hall would be located somewhere off the beaten path (e.g. in the middle of a forest) and managed by a few renowned hunters and rangers. This is where you would get your hunting contracts (quests). It could look something like this...

In addition to adding new content, a new Hunter Skill Line would be added as well. It would allow access to abilities such as Tame Animal (permanent animal companion), Track Beast (reading tracks or picking up scents), Hunters Trap, Hunting Spear, Slingshot (cool new ranged ability), Skinning (skin animals for crafting materials beyond pelts, such as meats), etc. It would also allow the player to craft bone weapons in ESO. The year ESO takes place is in the second era, in 2E 583, 262 years after the Guild Act was passed in the Empire. Many sanctioned guilds popped up very quickly. The Hunters Guild is entirely lore friendly.
