You can always stack more of a specific resist on one jewelry than you could of either armor or spell resist since they block overall.
If you are a vamp, get a nice gold glyph of fire resist and put it on a ring or amulet. It will go a long way for you. I'd rather be over the cap than under it when it comes to fire resist on vamps. For WW, ehhh the poison is rarely an issue since it is not as spammable as fire is so the poison resist IMO is optional there.
BTW for my examples above.. in place of lightning/shock you can put fire, ice, etc..

The most you will be able to negate is hard capped at 50%. You can do this with jewelry enchantments or you can combine your total spell resist and armor value PLUS that specific fire resist. One gold fire resist glyph is close to 30% fire resist. So if you are a vamp and want to negate the extra 50% damage you take, you will need to hit the hard caps using armor/spell resist and fire resist, unless you plan to put multiple fire resist glyphs on your jewelry which IMO is a waste since you can do it using spell resist/armor values PLUS 1 gold fire resist glyph.
