Some people prefer the food, some people prefer the drink. Personally, because the individual stat boost for each stat is lower in a purple recipe than in the equivalent blue, I tend to use blue H/S on my main and H/M on my alt instead of trying to buy the purple equivalents, and that strategy has served me well so far.
Now that the guild stores are open and the actual guilds who bid for traders this week will be able to get vendors, I think we'll see a trend of recipe prices going down over time.
And keep in mind that ZOS said they are thinking of overhauling the provisioning system, so when that comes out, it could be that all recipes will become useless.

That said... I never buy purple recipes. If they were changed so that the duration was lowered to 1 hour, and the stats buffed to the same as the blue recipes, then I'd consider paying even a couple hundred thousand for them. But as it stands now, blue recipes with significantly higher buffs for 2 stats, is worth more than purple recipes who's buffs for 3 stats are significantly lower but with longer duration.

Another guy was wanting 35K for a level 35 purple food recipe. I offered him a reasonable 10K for it which he declined. He better hope he sells it soon as that recipe won't be worth 5K in a few days.

doubt it, revamp can means a lot of things, such as allowing drink and food to work at the same time, but to erase all the work done by players who leveled provisioning? thats just...... lets say, unlikely.

I refer you to this thread in Developer Discussions for an idea of what they are going to do: http://forums.elderscrollsonline.com/discussion/119265/provisioning-revamp/p1
Comment from ZOS_GinaBruno on the last page says they are going ahead with it but it should take a few months to flesh out and put on the PTS.

i don't see anything that would affect food recipe price or provisioning skill line design, although it will shot up drink recipe price as they will be able to work alongside the food.
Its a good thing, drink is currently useless to say the least.

I had one guy offer me a vr5 purple food recipe at 34k, then he changed his mind. I would have paid it.

you see zone chat and how many people are spamming their purple recipes for sale?
that indicates they are pretty common, enough so that people use one then hock the rest.
last time I bought a purple recipe, I told the guy "ill take it for 500g if you are looking to just get rid of it, but I don't need that recipe" and after some back and forth COD'ed it to me for 500g....
I then picked up that same recipe within 4 hours.
Those purple recipes are common...just wait for one to drop if you don't want to deal with people who pretend its one of the most rare and highly sought after items in game.
Remember people use to do this with standard motifs....and now people will sell the blue ones to anyone who will pay.
I think they will replace what you have, including the knowledge you already learned. Some people prefer the food, some people prefer the drink. They are talking about changing the ingredients, and eliminating ingredient tiers. In my mind that means changing the recipes, which means we may have to find them all over again.
That is not clear, though, so we'll have to wait and see.
That being said, I would not want to spend a huge amount of gold on a recipe that may not do the same thing in a few months.
