I enjoy all the quests where there's a choice between doing what's morally right, and what's ruthlessly efficient. In example the quest where you decide if you'll liberate spirits or enslave them to fight for the Pact, and the one where you can destroy an object to end a curse afflicting some prisoners, or absorb it to gain advantage against a great enemy. I also appreciate the ones where you can choose between being merciful or being just.

Agree with this. I always get excited when I happen across Lady Laurent and Stibbons.
Another that sticks in my mind is the married goat-farmer who was seduced by a Daedra. I won't add any spoilers, but the finale was a real lip-biting moment in game and I CHOSE WRONG:'(

My favourite quest is definitely Exquisite Tears, a minor quest in Davon's Watch, Stonefalls.
You can decide whether collect a rat or a bottle of alto wine. I always choose the alto wine because with it the quest will be so hilarious. Gives me a good laugh every time.

I abandoned this quest and started over when I realized I'd made the wrong choice. The ending is still depressing, but at least I picked the right one the second go-around.
