Simple:
I buy my time. I make my payment. Then, I am done. My information stays mine, I can easily get more when I want to, and I don't have to deal with potential for errors down the road.
I cancelled it long ago hoping they would release Game Time Cards. Simple, let me buy this card then insert a code to extend the length of my time.
Damn I remembered how it was hard when I was younger and not having yet my beloved visa card

Yes but, and sorry if I am not getting it, isn't it the same? You buy your, say, 1 month subscription from official site (or 2 months from GC), you make your payment and you can easily get more by doing the same again.
Or you mean that this way you could buy less time? Say, hours, days, weeks, etc. ?

I want to be able to buy 1 month or 2 months or 3, or even 6 months; preferably with normal shopping at a local retailer. I can also live with doing it over Steam.
What I don't like is the feeling itself, the "binded" feeling of being in a Subscription. I do like and want the Subscription Model, don't get me wrong. I just want to pay my share up front and be done with it until its time to buy again. Subscription just feels like irons on the balls, game time cards make me feel like I am the one at the helm.

And I strongly believe you have a right to want that. That's one of many reasons why I don't use credit cards and get involved with any type of credits, and never purchase stuff in installments.

All you do is buy what time you want then after you are charged cancel your scrip and delete the payment info until you are ready to add more time. Only you are making this difficult.
I find it interesting that you trust Steam with your info but not amazon.

Making troll comments and personal attacks is against the rules of the forum. Making this post "about me" instead of about the issue is not constructive. Don't worry about where I prefer to shop.
If you trust Amazon, good for you. If you trust weird downloading sites, good for you. We are all different people and we all have different shopping needs. I prefer to buy things in my locality however I can use Steam if required because I already have an account there making it painless.
Steam has the potential to sell Game Time for ESO, like it does quite a few games. Game Time Cards are the easiest way to privately and quickly buy game time however my local retailers don't have any.
That leaves Steam.

1. This doesn't solve the problem. This isn't even an answer. The goal is to not enter my information at all. The goal is to purchase game time on my terms, by the most painless mechanism. Denying that is making this more difficult.
2. Your stance is called "Person Blame" which is used to blame the user-end of every system no matter what. You are using an Apologist Line. The end goal of this strategy is to "Pivot" out of the topic and into a discussion about my behavior. This is sauce of the weak mind. It doesn't offer constructive feedback, nor address the issue. Instead it confuses what the issue is and throws a dart at the wrong thing.
