I notice there are various of achievements that can be gained, including various achieves under the Collectibles tab (eg Chitin Accumulator). Would anyone be able to recommend a site that provides information on where and how to obtain these various collectible achievements?

It's not a complimentary term, we have been using it for years on some shooter forums as a term to describe the Achievements that some seem to find important. It's looked down on in some areas by some of us. It always seemed faintly ridiculous to me.
Survived the fight, was always the only one I cared about.0 -

Please be aware that as a former ex-pat living in Japan, I knew many malapropisms including the "could care less" variation to be perpetrated by the visiting sons and daughters of the British isles. ✭I might get a bit not liked for this....but getting achievements...isn't that about getting them yourself, and not read how and shown where?
Collectibles I think isn't working and also got a vague memory about someone here confirmed it. But since its going to be included more collectibles in coming patches, I am sure they fix that. I bug reported it in game just now, anyway.
Skyshard achievement. There are one for each zone. But since some find them on their own, and some follows an addon, they kinda loose their value, don't they?
Achievements such as completing a hard event in a difficult dungeon, like the Undaunted achievements, those are real achievements.
