There are no ‘hard stop’ mechanics, but there are definitely problematic areas. Like the Black Gem Monstrosity’s laser will be pretty painful without someone to block it, and you’ll be fighting against time on the final boss to not get overwhelmed by the refractions and their puddles.
I have no idea what's on veteran, but on normal I found Black Gem Foundry much easier than Naj Caldeesh. I read up on the mechanics on the last boss in Black Gem Foundry, but I could not follow them in practice (I could not figure out where I need to watch for colors). I honestly tried to figure out while fighting, but I killed the boss before I could do it. I guess I will need to watch a video with some explanations.
So, if you are asking about normal, go for it.

Yes, it's doable on normal with a companion tank. Not really that hard at all. Did it on a heavy attack DK in heavy armor and oakensoul blind run on release day. I also did all 3 extra bosses so I'm sure the buffs helped some.
Normal doesn't have the one shot mechanics. They hurt but you can recover. Safer to just bring an equally skilled friend and companions. You can quick reset that way too.
Soloed both dungeons on normal to do their quest dialogue, so yes, they're both possible to solo, even on Naj you can just Streak/Mist to the other side without crossing the bridge, though you'll lose a line or two of dialogue for not bringing it down with someone else.
Black Gem was the easiest of the 2, though I'm not sure how optimized you'd need to be, I was on a regular DPS build with Pale Order on.

On normal I agree with everyone else, yeah, it's do-able solo.
On Vet .. NO. The mechanics and difficulty between normal & Vet for BGF are night & day. In fact, the first major add pull before the first boss will likely take you out as you'll be overwhelmed.
As for the final boss, his mechanics on Vet are very complicated and really require multiple people to pull them off. Trying to manage the add mechanics as well as the boss aggro and also while trying to keep yourself healed and perform the mechanics in the small window you have to do them is unlikely to say the least.
