The max leveled characters I have are a Sorc, Nightblade, and Templar. Ideally I'd like to respec one of them insted of having to start a new one with a new class.

I generally swap between two sorc PVE builds for "smooth" soloing of bosses.
One bar oakensorc is pretty much a breeze. Just the general build, nothing fancy. This is probably what I am running 90% of the time in Imperial City when I am running through the PVE content outside of Mayhem. During Mayhem, I run my PVP build.
But I sometimes do it on my two bar build running Mother's Sorrow, False God, and Death Dealer. It is a bit more of a challenge than the oakensorc, and does like half the damage. So not easy for sure, but doable.
Also not too difficult to solo them on a general single target PVP setup. I find success doing so on my max mag sorc PVP build. But it is a looong grindy fight to do so given the lack of AOE or true dots. Just lots of crushing shock spam. But it does position me to handle for other players showing up very effectively.
im sure there are multiple builds that will work, but what works best for me (at least the stats i have)
between 35-40k hp with food
resistance cap
decent recovery for sustain
heals (hot + burst)
if your doing templar for example, you could go with a deadly strikes + something more defensive (hexos ward, leeching plate), your choice if you want a monster or mythic (or both and drop a 2nd 5pc set)
a lot of soloing a banner boss mostly comes down to knowing its attack patterns, when to avoid it (kite the spinny 2h, kite the enraged dual wield, dont attack green shields with stam projectiles, dont attack blue shields with mag projectiles)
fighting the "mage" (red banner) guys is usually more difficult than fighting the melee (blue banner) guys
