If they're located in one of the major trading cities (on PC/NA at least... that's places like Mournhold, Vivec City, Elden Root) then they are likely on the hardcore side because they're very expensive locations. But, a lot of those hardcore trading guilds also have a sister guild that's less hardcore and they may mention that guild in their info, so still worth a quick look.
Guilds in less desirable locations like minor cities / random traders in the middle of nowhere / outlaw refuges will tend to be the least hardcore. Which locations are most and least desirable may vary by server, but someone could offer some advice I'm sure.
The idea above about looking for a social guild with a trader is also a good one.
If guild finder isn't working out, you might try going to a major city and try asking in zone chat - guilds are always recruiting so you might get a response that way.
I also suggest editing your post to include what server you play on - you might even get some specific suggestions here on the forums!
And finally, don't feel bad about joining a trading guild for a bit and leaving if it's not right for you or if you take a break from trading or from ESO. It happens all the time in my trading guilds and we never take it personally - in fact members who leave or get kicked for inactivity are always invited to reapply again in the future.
In the end the only way to know for sure if a guild is a good fit is to make a (hopefully educated) guess and try it out. Good luck!
