Weapons in dungeons only drop from final bosses. And the final boss is guaranteed to drop a weapon (or jewelry piece) you do not already know. If the boss is not the final boss of a dungeon, they will never drop jewelry or weapons. There is also a chance of getting a weapon from a treasure chest in the dungeon, but these are random and not guaranteed to be something you do not know. Always bind gear as soon as you find it, so it is added to your Collections and will not drop again. There are 2 jewelry pieces and 13 weapons per set and 3 sets per dungeon. So the max you should need to run a dungeon to get everything is 45 times, but it is usually significantly less if you loot all treasure chests or trade with other players. You should always farm on normal because it is faster and the only thing that does not drop on normal is the monster helmet (Grothdarr set, in the case of Vaults of Madness).

Generally, weapons can drop from last boss.
Fan of playing magblade since 2015. (PC NA)
    Might be joking in comments.

Agree, now for the old dungeons it might be easier to get an group doing an vet pledge. Who also can drop purple jewelry.
For the DLC normal is easier, also join friendly guilds, also speak out. Saying you never done the dungeon before will not get you kicked in a guild run. Obviously if you join in an vet dlc HM run as an fake tank you will get kicked.
But if are unsure and they keep asking its little danger joining.
Grinding just make you go in circles.
Asking ZoS for nerfs is as stupid as asking for close air support from the death star.
