Woodelf or khajit?

I've been running a khajit stam blade since release but I'm thinking about race changing to woodelf.
Will I even notice the difference?

khajiit has increase crit which is ideal for PVE

You'll notice the crit loss in PVE, but I prefer wood elf for PVP - assuming you're a ganker. Redguard/Imp are great if you will be out in the open fighting.

For pvp, as long as you don't run a high stamina build, Wood Elf > Everything

I want more sustain hence why I'm thinking about woodelf and it'll be for pvp I don't pve on my stam nb much.

Because you don't need high stamina to kill people. With the proc sets you just go over the top with sustain and be maximum survivable.

Example: Wood elf + werewolf or vampire + orsinium health/magicka + serpent mundus + major and minor endurance buffs means you should be able to build for high burst damage and still roll away with 23K health.

Selene + DW viper + vicecannon, for example.

Combine a Wood Elf with Bone Pirate's Tatters with a monster set and another strong DPS set (5-piece like Draugr Hulk/Spriggan, 3/2 like Agility/Leki, or Clever Alchemist if you're just a ganker) and you will have ~3k stam regen with solid damage.

It all depends on what kind of build and play style you have.

Wood Elf synergize very well with high regen builds.

Khajiit synergize very well with DPS builds.

Not to say you can't do either/or with both races yet from a strict min/max perspective each is better at one thing than the other. Even if the difference is marginal.
