Can you start multiple guilds or do they try and turn you against each other like in oblivion?

    If you are referring to the fighter and mages guild, I'm not positive but I'm pretty sure you have to complete them to finish the main storyline. So yes, you can start both.

    You can join all the NPC guilds in the game - in fact I would encourage you to join all of them, as they have questlines, XP, and skills to unlock.

    So far we have Mage's Guild, Fighter's Guild, Undaunted, Thieves' Guild, and Dark Brotherhood. (TG and DB are DLCs).

    You must be thinking of Morrowind. There were no guild conflicts in Oblivion (aside from the ones that were directly part of a single guild's questline, like Fighters Guild vs Blackwood Company).

    You can complete the Main Story without ever joining either of them.

    Any NPC guild in the game you can be part of all at the same time. The past two DLC were all about two guilds you join.

    Player created guilds, I think there is a limit of five you can join all at once?

    Yep, and only one is allowed to be a guild you have created.

    You are thinking like Telvani, hhlau house etc from morrowind, where you could only join one house and the others then disliked you.

    There is no dislike in this game, you are perpetually the hero helping people, the only negative you will get from NPC is from enemies.
    Tl;dr really weigh the fun you have in game vs the business practices you are supporting.
