I was tanking Oathsworn yesterday and someone mentioned that there was a way set incoming attack colors by the type of attack. Like blue for AOE, red for bash etc. I could not locate anything under the PS5 options. Possible?

You can change your enemy and friendly AoE colors but that’s all. Attacks that can be bashed are always red squiggle lines.

As Soarora mentioned, under Settings>Cameplay>Combat you can enable Custom Colors, then tweak the colors for friendly AOE's and hostile AOE's, so you can set both to be very clear regardless of the color of the environment you're in.

I have the enemy and friendly colors set. When you say attacks that can be bashed have red squigly lines where are those lines at? Around the boss, or floor? I don't recall seeing anything like that ever.

They come out of the enemy - like red sparkle lines (like the gold ones for a heavy).

These are examples for the most common telegraphs that are tied to enemies. White indicates attacks that have a charge up time and will hit hard that can't be interrupted, and red indicates attacks that can be interrupted to prevent the attack from going off, or stopping it early. These can't be changed, only the ground AOE colors.
