I'm confused, how can you both get to 81? I always thought reaching 80 was an instant win?

80 points IS an "instant" win at the end of the turn.

There are Mora and Druid cards that award the opponent Power, this could have been the case here.

I guess in this example the person that managed to reach 80 first (e.g. the person that got to 80 and then ended their turn) did win? Because that‘s how it should be.

The player who won was the turn player.

But the turn player was not the player who reached 80 (or more) score first. That would have been the non-turn player who lost.

Several cards can give the non-turn player power, but power only converts to prestige for the turn player at the end of the turn. Power, for the non-turn player, is retained at the end of the turn players turn.

Only one card can give the non-turn player prestige during the turn players turn.

Note: I post this tip here because it could have hypothetically been relevant during a mora druid game that I was playing. You know, because Mora games, half of the time, turn into awful slogs to 80 points that take forever until someone hits 00 on the tavern roulette. Because it was almost a relevant question during that game, I decided to see what would happen during a true tie game.
