List of confirmed food and drinks for different races of Tamriel

I’m keen on Tamrielic food and I’m trying to figure out confirmed cuisine of every race. I’m trying to put all confirmed food and drinks into lists. My sources are ESO recipes, both current and deprecated (deprecated are not in-game recipes after Update 6, but they are confirmed by lore), lorebooks, dialogues, ESO items and all available lore sources. For confirmation that a particular dish or drink belongs to a certain race, see spoilers. Any help with my research is highly appreciated!
Altmer Drinks
Sylph-Sandy, Sylph Gin, Dream Madeira made of Wisp Floss (1). Sylph-Mead (1.2). Golden Pear Ale, Metheglin (honey liqueur served in ewer), Old Epiphany (served in double carafe) (1.3). (1) Deprecated Recipes. Ingredient Wisp Floss has no direct confirmation. Drinks are confirmed as follows: Sylph-Mead is mentioned as Altmer drink in ESO (see 1.1) According to Contraband, Bottle of Vintage Sylph-Mead description, it is made in Glister Vale Hiveworks. Glister Vale is above Tanzelwil – found in Jewelry Crafting Survey: Auridon. So, Sylph drinks are Altmer drinks. No direct confirmation for Dream Madeira, but it doesn’t seem doubtful as it is made of the same ingredient, as Sylph drinks.
(1.1) ESO: Sylph-Mead is found in a dialogues with Prince Naemon and Darkvale Coster. Also Contraband, Bottle of Vintage Sylph-Mead description: Unopened bottle of vintage sylph-mead, quite valuable to connoisseurs, from the now-abandoned Glister Vale Hiveworks.
(1.3) Golden Pear Ale, Metheglin, Old Epiphany are Altmer drinks according to Emperor’s Guide to Tamriel and Kyne's Challenge
(1.4) Current ESO recipes. Altmer origin confirmed by drink names
(1.5) ESO Contraband items
(1.6) Springwater wine confirmes the rest to be Altmer. Found in Letter from Minique in Phaer

Doubtful AD drinks from Deprecated list- need help with them, seem to be Altmer

Golden Apple Ale, Golden Liqueur, Apple Wine, all made of Ripe Apple. No information for Ripe Apple. No information on drinks. There’s a kind of hint: Golden Pear Ale and Cloudrest Golden Ale are confirmed Altmer drinks. Also, “golden” is often used by Altmer: Golden Fleet, for example. Also, they can't be Bosmer drinks because of Green Pact. These drinks seem Altmer to me, but hints are just hints. So, doubtful.

(2) Deprecated Recipes. Ingredients - Aged Meat and Pig’s Milk are directly confirmed by ESO and TES lorebooks. The drinks made of Aged Meat and Pig’s Milk are also widely confirmed by ESO and TES lorebooks.
(2.1) The ingredient Dusk Beetle has no direct confirmation,. But there is a book The Dreadful Theft of the Sun’s Dusk Ale describing a prosess of brewing Sun's Dusk Ale from bugs. Other drinks share same ingredient and their names clearly show they have the same origin. ALso, there's a Bosmer potion called Torchbug Treacle in ESO (dialogue with Sergeant Firion) confirming that Bosmer do make drinks from insects

(3) Deprecated Recipes. Ingredient Molasses is confirmed to be a Khajiit ingredient in a book “Moon-Sugar for Glossy Fur? Yes!”. Fermented Treacle Tea confirmed in a book “The Chronicles of King Kurog, Book VI”. As Treacle Run, Cane Mead share a same ingredient, Molasses, no doubt they are Khajiit drinks.
(3.1) Deprecated Recipes. Ingredient Glitter Rock has no direct confirmation. Still, 2 confirmed Khajiit drinks are made of it: Sweetmilk (found in “A trader’s Eye for Fashion”) and White Eye (found in ESO Dialogue with Golor).
* Gold Coast Muscat shares the ingredient with confirmed Khajiit drinks, but the Gold Coast in the name puzzles me. Is there a Gold Coast in Elsweyr? Or maybe this sould be read as Gold Muscat “Coast”? Whatever is the answer, Gold Coast Muscat is doubtful for me.

Where are the Altmer getting coffee from? Back when I assumed Summerset was more...tropical it made sense, but now that we’ve seen it I wonder where they get it from. Elsweyr? But you’d think they’d drink it too then if it was native to where they live. I could see them using moon sugar instead of cane sugar to sweeten it. Maybe Hammerfell?

Will try to find something on coffee. On the one hand, Altmer strongly keep to their traditions; on the other hand, open trade could bring new recipes and products... Now I'm digging into the AD food - it is much more puzzling than drinks.

I honestly think it just wasn’t thought out. They imagined snooty elves drinking coffee, and wanted some aliteration. Could’ve been a good addition to the lore, if Summerset’s climate matched its geographical location at all. Then we could run into coffee plantations and learn more about how it fits into Altmer culture.

But Zenimax preferred turning Summerset into Somerset, England. Oh well.

Deprecated recipes contain Imperial food, as well. Maybe will do it after AD, it is not as numerous as Pact food. Also we have some exotic insights such as Maormer and even goblin food

I don't understand the "deprecated recipes" concept, was it ever released in game? I remember deprecated ingredients (I still have some, for collection, in my orc's inventory) ...So were they recipes available at DAY 1 in ESO which became "gray items" later?
Or are they simply early-development data in the alpha or beta, like, say, the datamined lore about Sunhold and varlines (which is kind of expanded-universe instead of actual canon now - sorry for the salt in the wound psychotrip if you read this ^^')


It's hard for me to help directly since all the cooking stuff are very localized versions and I'm not aware of all the cuisine words in english (when they're not norman/latin like "cuisine" or "pork" haha)

I used a very similar way to identify altmer food and drinks (here in french with pictures) that I used during roleplay party

=> Looking at my Provisioning master crafter's list and noting all the names with a high-elf location in it

- same like yours (1.4) Lillandril, Crystal Tower/Tour de Cristal, Cloudrest/Le Pas-des-Nuées, Shimmerene/Étincelance

- adding :
- - the psijic recipes (insofar as Artaeum is extracted from Summerset)
- - the aldmeri orphan gruel (from the New Year event, it's given in Valenwood but it's clearly related to the Altmer race-themed quest)
- - the drink from Balfiera (because of the Direnni altmer)

- lacking :
- - maybe the rarest recipes I haven't got
- - recipes that are not actually "playable" provisioning like mere mentions in quests
- - reciepes that altmer origin is only mentioned in game lore that I forgot or didn't notice (except from the Gruel here, so)
- - reciepes that altmer origin is only mentioned in expanded universe lore (such as older TES games)



I'm doing the same with my Bosmer spinner : checking all the recipes she knows, since she only learns the ones without any vegetable ingredient.
So here is a new issue:
- is a dish a genuine bosmer dish because it's "safe for Green Pact fundamentalism" (that in-game Rotmeth recipe seems not to be, iirc there's plant thing in it, but that some fish recipe from Skyrim will be)
- or is it because it seems produced in Valenwood, because it got a bosmer-like name?

This looks like a "No True Scotsman" case hahaha!

About the deprecared recipes:
As far as I understand, the provisioning system was a bit different from what we have today. But still, deprecated ingredients were in-game and player created dishes and drinks I listed. Also, I tried to verify every deprecated recipe using the existing lore - ESO books and dialogues. The reason they changed recipes and ingredients was just a technical thing - same ingredients for all Aliances insted of Allaince-specific. So, I'm pretty sure that they are canon (I'm keen on finding exactly "canon" things).

As for current provisioning system, unfortunately, ingredients are not very reliable thing. Have a look at Skingrad Muscat recipe: Surilie Grapes and Comberry. Comberry! Which grows in... Ascadian Isles, Vvardenfell. And here's Sujamma: Barley, Comberry and Lemon. I doubt that barley is cultivated in Morrowind, as well as lemon... So, I use only names of recipes hinting their origin, like Shimmerene and etc...

Oh okay, then definitely they are canon. After all, the player-characters are not intended to be able to cook anything in Tamriel. So these deprecated recipes join the "NPC only" abilities of the world background...

As for the provisioning, well you're right that some names of recipes seems to contradict their own ingredients.

I think we've got two ways of interpreting this:

- The "gameplay" ingredients actually are "special touch" ingredients, like in a cocktail, and the main "roleplay" ingredient of the dish is implicitly used by the PCs when cooking (such as... water, milk, butter, ordinary salt, or any ingredient identified in the name of the recipe itself).


- Some "gameplay" ingredients may be generic types (like "poultry" and "fish") that are implicitly more specific when chosen by our PCs to cook a specific recipe.

So your Comberry is whether an imported small quantity for flavor in that Skingrad wine, or a generic name for a more specific local berry of Colovia.

I think comberry is generic in this case... But still, even with generic items being questionable, we have a nice amount of true "racial" dishes and drinks to play with in our stories!

highelf food seems passable, and woodelf food is disgusting, like eating rotten carcass from sewage while drinking cesspool liquids.

Khajiit like everything to be very sweet. As for wood elf, well, it is weird, but still interesting to explore. More edible will come soon from Nords, Bretons and Redguards, and more weird from Argonians and Dunmer. Sweetrolls and raw slugs, all varieties of mead and snake sweat... I'm truly in love with Tamrielic cuisine!
