ZoS made a PvP server where the only thing that was different was that all set bonuses were turned off. Would it show blatant imbalance between classes? Would it actually show there is balance? Would it be fun? Would chathulu destroy us all?

No such thing, never will be such a thing, and there can't be such a thing as balance the moment any game has different classes.

Balance would look like this: Everyone has same race, class, gear, skills, stats, and quickbar setup. Let the best man win.

Instead we have options to counter one build/class but at the cost of becoming
vulnerable to another. That is MMO pvp "balance".

Yeah, I’m just bored and I see nothing but nerf threads and this is a passive aggressive post kind of saying these same people would still die regardless of people’s builds. Not saying some builds don’t grossly over perform, but as much as many don’t want to admit it, ESO PvP does in fact require skill hehe.
