Viability of Weapon DMG Increasing Heavy Sets

I have a stam sorc build idea going and I've decided I need a 5 piece heavy set that increases my damage. There are a ton of options here and I was wondering if anyone could chime in on the practicality and up time of some of these sets in normal PVP conditions. My usual PVP routine is solo and my build will be tanky so you can assume I will be taking a lot of incoming dmg (aka not dodge rolling / LOS). It looks like my options are

1. Armor of Truth - 450 weapon dmg for 10s when you set an enemy off balance.
- I don't think there is a on demand way for a stam sorc to set someone off balance so this set is most likely out.

2. Ravager - 8% chance when you deal MELEE DMG to get 630 weapon dmg for 10s.
- I've used this set before and felt like the buff was not up as often as I'd like. Do DOTS count as melee dmg? I assume bloodcraze does but poison injection does not? I also feel like there is a cooldown in here somewhere... can anyone confirm?

3. Seventh Legion - 10% chance on dmg received to get 500 weapon dmg for 5 seconds.
- I heard there is not a cooldown on this (maybe just 1s) so theoretically in situations against even a single competent enemy there will be multiple opportunities to proc this every second.

4. Warriors Fury - when you take crit dmg, your weapon dmg is increased by 30 for 6s, stacking up to 25 times (750 weapon dmg total at max stack).
- I'd love some opinions on how quickly this stacks. I feel like there are often times where I disengage for 4+ seconds and there would be a high probability to lose my stacks and have to start all over again quite often.

So does anyone out there with experience have an opinion on what kind of "uptime" i'm looking at with these various sets on the weapon dmg bonuses? Again, my build is a heavy armor (but relatively low HP), high sustain, high HP regen build that will use dual wield with sword and board or bow.

I wanted to add alchemist and hunding to the list of potentials but didn't want to write too much. Hunding is definitely an option but I was hoping someone with experience with these other sets could come in here and tell me that they have an awesome uptime and they should be used.

Armour of truth compared to the rest is bad unfortunately, in my eyes. Ravager should proc from your blood craze ticks, poison injection counts as poison damage plus its ranged so safe to say no on that. Hurricane/craze, basically being a stam sorcerer should be the best stam class to use it theoretically. Seventh legion is actually good but i think the jewelry is all healthy+ you have to be getting hammered for it to be consistent. Fury is great for 1vx but against 1 or 2 players it will not shine as much. Out of all those I would say Ravager or Seventh legion. Depending on your playstyle you can choose, do you go in and damn near one shot? Ravager, do you have longer fights? Seventh. As for hundings that will give you crit which heavy lacks and the most consistent dps than any other set, has no jewelry slots as well. Same goes for alchemist, alot of health and high burst that you can control. Just not consistent(best choice for group play would be alchemist/hundings/ravager/seventh).
Plus you can go 5/1/1 with crafted sets, light waist and medium gloves(DK/Sorc benefits the most with higher stats). To what you are saying you are looking to be tanky with damage so alchemist provides crazy health and high concentrated damage, plus 5/1/1 seems best. As for sets with jewelry, ravager.

Edit: After checking the 2-4p bonus on ravager and seventh I would ditch seventh. Max health on ravager beats health recovery. Unless you are using troll king?

@FlyLionel http://en.uesp.net/wiki/Special:EsoBuildData?id=12566 that is where I got to myself on the build before questioning whether or not I should really go for 7th legion so yes, I do plan on using troll king so that health regen base from 7th is welcomed. Not sure if I want to use bow or snb on the back bar and my skill's used are far from set.

Are you sure that Hurricane procs Ravager? I thought that because the final radius of Hurricane gets to 9m that it was not considered melee dmg.

Do you know about a Ravager cooldown? I've read that 7th can "reproc" thus updating your 5s timer on the weapon dmg but Ravager can not "reproc" therefore you will always have periods of no weapon dmg buff regardless of how much melee dmg counts per second you are doing.

Sword and shield bro, maybe even use defensive stance instead of streak or dark deal and put those on overload, you will have reflect plus sorc doesnt have major mending so havin that increased block damage and reduce block cost while blocking and spamming vigor would save your a$$ lol..and sorry on the hurricane thing I mistook melee damage for physical. Most likely will not proc, spiked armour on the other hand..I was never aware of a cool down but seeing your setup right now you will have alot of consistent damage with flurry/craze it will proc every other rotation if it does not have a cooldown. Both are really good, rav gives you 10 seconds and 7th gives 5s which is pretty bad but im positive that a set that minimal would be able to reproc. Plus 7th heals you as well, you are not running rally so all healing is welcomed, go 7th legion! (Ravager in a group would be better, when that procs its dawnbreaker time). Also I know streak is sexy and all that but having crit surge and dark deal will pressure your magic resource, having CC control during an entire fight is key and streak is not a consistent CC(zapping over someone while melee dps just to CC). Please consider reverb bash, defile the suckers and let them taste the dots from melee hurricane/craze; this will help with templars/dk's.
