I like to pvp with 13k stam, just for the occasional dodge roll. You can probs sacrifice a bit of max magicka instead of regen though if you just want more stam. Don't forget you can change mundus for free too. Try things out until you're comfortable.
I much prefer tri-stat food. 9k stam will get you killed if you get caught with a root and a stun, and theres a zerg coming at you... (eg the front edges of an eye-train).. 14k will let you do the break-free and dodge-roll, and another dodgeroll + bit of sprint while streaking to let you escape (most of the time) - at least to escape just enough to be behind friendlies, at a gate etc.. It also gives enough to break-free from anything a soloer can throw at you (just don't go daft breaking roots)
But it depends what you want to achieve, and how.
There are setups out there that focus on stam-regen and dark-exchange for resources that allow for much more roll-dodging, sprinting with the odd streak to give a ton of mobility and the resources to sustain it. This is more of a 1vx (or some vs many) setup.
But if you simply changed to food, your mag regen will be too low at 1400 (unless you're using lich or something?)
