Welcome to being a stam DK. You got no escape, so be tanky and kill as many as you can before being completely outnumbered.
First of, battle leveling gimps your damage output quite a lot. The only thing you can do is either reach v16 or turn it off.
Second, healing on stam characters is actually quite strong nowadays. You got rally ticking from the 2h and you use vigor for more healing. Boost it with igneous shield and the burst heal from reactivating rally together with the ticking vigor is really really strong.
I also like to use devouring batswarm for "oh crap" moments and because it gives me 6s time to go full offensive against multiple targets.

So would you suggest then wearing some pieces of heavy armour to be more 'tanky'? Because I am in 7 medium right now... I have not got vigor yet on him, but am close to unlocking it, so will give that a go! I have rally already, but not igneous shield, so will try that out next time too! thanks
Yes, I use Rally, but it doesn't seem to be enough... I think maybe I just need to fight through it and unlock vigor, and hope that it will help. I am not ashamed to admit, I am s*** with stamina builds haha! Hopefully practice will improve

As a stamina DK in medium armor I make sure to have the medium armor ability (forgot the name off the top of my head) Igneous Shield, Green Dragon Blood and Rally placed somewhere on my bars.
Green Dragon Blood provides a nice boost to health and stam regen, plus a burst heal when you are low on health
Igneous Shield increases the healing ticks of Rally and provides a fabulous damage shield if you know you are about to be bursted.
Rally is generally awesome, if you let it go for 10 seconds and reactivate the ability you get a really nice burst heal, also adds a nice buff to your weapon damage.
Medium armor ability gives you 20 % dodge chance and immunity to all cc when its morphed.
Personally I do not like heavy armor, too slow, stamina regen is massively gimped and a loss of 12 % damage with melee weapons is not acceptable as a tam build in my book, and dodging is far too taxing to your stam pool with heavy armor. It is just downright hilarious how fast you can sprint as an orc in medium armor with all the right passives, you can outrun pretty much anyone if the °°°° hits the fan.

Which passives do you use to be 'fast'? Because I am SO painfully slow! I apologise for all of the questions, stam is so new to me, I have no clue I have only ever used this guy in the past for tanking in heavy armour, but got bored levelling like that so just put him on a shelf for about a year want to try to get my healing up to a level where I don't think to myself "Oh s***" when I see a couple of enemy players because I know they are going to kick me to dust in seconds. I would in other circumstances just not play this character anymore, but I really like him and want him to succeed so bad

Max out all the med armour passives, you will notice a huge difference in mobility, and will have more wpn dmg from the 12% wpn dmg from 5 medium armour pieces, as @wollust said earlier, 5 medium/1light/1heavy is the way to go, takes advantage of the undaunted passives also if you have them.
I love nipping about with medium armour hehe.
