If I'm not mistaken, horses get a visual upgrade after you put 20 points in a stat.
So, for your Gaited Horse, you'll need a total of 40 points in stamina to get the armor.

I see. So is it a different helm for each stat? Do you have to feed one stat 20 times or just feed the horse 20 times in general?

20 points in Speed gives the horse some kind of Ring and Strap contraption on the back of your horse behind the saddle.
20 points in Carry Capacity gives the horse Saddlebags.
20 points in Stamina gives the horse some kind of armor but I've never seen it.
Notand what if you feed the horses 40 times in 1 stat like does it gives you more stuff?
