They could also just be flying only (no ground walking/running), so when you press the button to mount, they swoop down from above, you mount, then they take you up immediately to a designated height -

I remember even Blizzard saying they regretted introducing Flying mounts with the Burning Crusade expansion, how it diminished world pvp and made many zones feel small and less interesting. Hopefully -
