Little more help with Stamina PC Direction

Returning from ~8 month break. Middling player. I've progressed most with Sorcs (stam and magika) but really want to go all out stamina type this time. Just having a hard time pulling the trigger on build direction:
- The increased damage and sprint of the Orc race appeals but I'm open to compelling arguments.. don't care to be a kitty for visual and I think I'm tired of going Imperial
- Will spend VAST amount of time in PvE
- Don't need to be built for stealth.. rather use bow for range/utility and then run in and either spin it to win it or wreck it with my giant club
- Do not want to depend much on Majica or light armor!.. ... and would like to be able to evolve later into tanky/support build
That sounds like what race and class (other than sorc) to you? I'm leaning toward NB or Templar... and Orc or Redguard
