As of today I've got over 111K Seals of Endeavor (111,210 to be precise).
So... what's wrong with me?
I really like collecting the stuff and never spending it.
Also I might have missed some days inbetween... I'm not sure.
Playing more or less sice the beta-version of ESO in early 2014 came out, I really find collecting the above mentioned Seals quite satisfiying.
I think there should be an Achievement for collecting the Seals of Endeavor, because buying houses will grant you one, e.g..

Very interesting questions.
In my case I'd say there has been a development over the time:
First I wanted to spend the Seals, but there was nothing worth to me spending them on.
Then I just collected the Seals - and that's the whole story until now.
Simply put: Nowadays I just like to collect the Seals.
An Achievement would be VERY nice, but in the end I just go on trying to collect more Seals...
Because I like it somehow (maybe a bit close to an addiction?) - and that's a reason why I still play the game, even if it's (very) frustrating in some aspects. I love certain features of the game that keep me holding on to it for over eleven years until now.
But I'd totally spend the Seals of Endeavors if there were a future house having 10,000 spaces for furniture that could be bought for -let's say- 100K Seals of Endeavor. I'd gladly spend the Seals for that... housing in this game is my true endgame content, after all.
...but this is not how the game works (at the moment) and it will also never happen in the future, I think.

While I don't have that many SoE on one account.... over 4 accounts, both PC megaservers, I have about 160k total.
There's still nothing to spend them on....

Wow, very cool! Is there anything you've been waiting for/hoping will show up one day, or just in general not super into the cosmetics and whatnot?

Not really. I don't go out of my way to do endeavors - in fact.... just right now I'm logging in only to pick up riding on some babies. I'm.... feeling very disconnected from ESO these days. 7 years of play is.... a long time. That was about the point where I decided WoW wasn't fun any more.... After the big reveal (or whatever the devs want to call it) in April, I will decide if I'll ever mess with ESO again.
And to answer your question about if into cosmetics etc or not.... no, not really any more. After 7 years I already have all the costumes and other cosmetics I really want (across 4 accounts, both PC megaservers - so yes, I've spent a lot of money on this game for cosmetics). And I don't have any interest in flashy mounts.
Anyway, if you do end up taking a break, I hope you're able to either find another game that brings you joy or come back one dayAlways enjoy reading your posts on the forums when I come across them (hope that's not weird to say; I lurk a lot >.>)
