Which addon are you using? My bank is cluttered with furnishings all the time (actually it's more or less everything I keep there, except for a few items to swap between characters every now and then) because I want to have an overview about what I have on hand, and if I put that stuff in houses, I lack that (of course I could begin to write spreadsheets, but honestly, in the few hours I might have each evening, I'd rather be playing than writing lists).
Of course; there are a few new materials every year. Maybe I don't need a stock of every reagent, grocery and style material, but we've been able to keep as virtually much as we want in TES games since Daggerfall.
I think a factor that encourages me to do this is a lot of these goods sell for nothing or close to that but are expensive to buy. I can sell a portion of nickel for 1 gold. I can buy a portion for nickel for 15 gold.
I can sell a potato for 1 gold. I can buy a potato for 150 gold. I can sell some perfect roe for 0 gold.
It would be seller's market except most of these resources can gradually accumulated fairly easily. So it's a hoarder's market. But that's
Whereas take diamonds in Morrowind: you could keep them to make potions. Or you could sell them. If you decide that you do want to make diamond potions after selling all of them, you could buy some. You'll probably have pay more than you got for the selling them, but it's not like in ESO, where the shops charge 15 or 150 times more, if they sell it all.

I used diamonds in Morrowind, too. Well, at least most of them. I never used lanterns or candles, though. Too important as a decoration
