Imagine being in the shop in the queue for cashier behind an old person who isn't that fast as you and needs more time to put the food at the track; would it be fair to push in front of them stealing them queue because of that and buying some time like that?

I am aware that there is no ZoS rule about that because it's a game and such things cannot be proven, but i am reminding you to use a common sense if you have a brain for that.
And to do the most simply thing possible: turn around and find yourself another mat once you saw someone stepped before you to pick it up.

I agree in this scenario. However when people wait till you get attacked then take the node or chest...kinda trasy.

You are wrong. Both of you are going for the same node. One person gets their first. What is rude is suggesting they are stealing your mats right under your nose just because you were slower than they were.
I recall going to harvest a node. Another player tried to get the same node but had to go through, and agro, a group of mobs just to get to the node about the same time I did. I harvested, they probably could not since they were being attacked, and they subsequently sent me a hate tell for stealing their node. An obvious example of someone who was out of touch with reality as I legitimately beat them to the node.
Edit: It was also explained very well by @r3turn2s3nd3r that it merely appears that they arrived late when in fact they arrived just before you. The server telling you the player's position is just behind their actual movement.
So both you and the OP are very incorrect.
