There is some bug related to poisons. If you have a poison equipped when you eat food, you will lose roughly 500 of each stat. If you eat the food without the poison equipped, you will get those 500 back.

Greetings!
Thank you for contacting The Elder Scrolls Online Team.
This apparent drop in stats after Update 19 was the result of a bug fix included in that patch. Food was previously based on the quality of your weapon; it is now correctly based on the quality of the food. This may result in some slightly lower stats in some circumstances.
Please note: there is still an outstanding issue with poisons - if food is used while a poison is equipped, it will be based on the poison's level and quality rather than that of the food. This will be fixed in the next update.
Thank you for your continued interest and support!
Warm Regards,
Nicholas
