Does anyone know why they actually summon those creatures? They can't handle them on their own, hide themselves behind a magical barrier afterwards and scream for help. What's the point?

Elder Scrolls trope / tradition. Their games have random event encounters like the Summoner, the Hunter shooting a deer, bandits picking at a chest, a poor guy looking for you to give them gold, or a random merchant you can intimidate for free stuff.
I always wish I could sit back and watch them get destroyed by that monster they summoned, but alas, that isn't an option, for they haveth plot armor.

i know its a random encounter to let the game appear more lively, i just dont understand this encounter. Why do they summon daedric creatures which they can't control or defeat? Npc summons several daedra, hides behind a barrier and screams for help. What a smart move.
