You do not need to keep fishing trophies. Perhaps they will have a use in the future, but they are incredibly easy to come by. So if they develop a use, you can spend 2 minutes fishing and get them again. The actually rare achievement fish are not trophy fish and will not show up in your inventory.
As for the OP's question, quest and dungeon related trophy rewards are purely cosmetic. They offer a nice little animation for a few seconds. Some are more interesting than others and it really comes down to personal taste. If you're going to play through the same faction quests the same way, there is no reason to keep them as you'll get another one. If you don't care about the effect at all, you can sell it to a vendor. Some have desirable effects however and it may be more profitable to trade it to a player in that case. AFAIK Finvir's Trinket is not one of these. You can safely sell or delete all trophy items without negatively impacting your game.

I had this trouble with my bags being full (20 treasure maps). I just opened them, snipped a pic and now have a file with all of the place-labeled maps and 20 more bag slots!
