Sounds like an interesting idea, but typically they remove a feature from these assistants that typically keep players coming back to the cities. Like the stolen goods has a tax, the merchant doesn't repair, the banker doesn't access stores and guild stuff, and the deconstructor lacks the ability to refine raw materials and craft items.
Not sure what they'll not allow us to do with such an assistant.

But we still need to come to a town for banking and repair. We have fully functional outfit/dye stations in our homes so no reason to make an assistant any less functional.
Personally, I wouldn’t be interested, unless I really liked the assistant. I really want an armory assistant but am waiting for the right one.
BloodyStigmata suggested a price hike on outfit changes which might be how ZOS does it to be honest. The only reason we don't see the treatment done on the Armory System is because that's purely an inhome based system with the exception being they added a station to Cyrodiil recently since the assistant can't enter that area, and queue times are atrocious.

But they could have added armoury stations to towns (or added that function to outfit stations) instead of putting it in houses, if they'd wanted it to be an incentive to visit towns.
