We waited almost two months for major bug fixes and the bugs are still there after last night's patch. I was able to see a critical bug was still there within twenty seconds of logging in.

I'm genuinely curious, how does ZOS test their updates?

    People tell me ZOS is a big gaming company, so I figure they must have some sort of QA. [snip]

    I really want to know what their process is so I can at least understand why they think it's ok to leave their product fundamentally broken for months at a time.

    They test like all the other companies do.
