In Summerset, some NPCs treated you differently depending on the fact if your characters is an Altmer or a non-Altmer. In Morrowind some dialogues were a bit different if the character is a Dunmer (and I think Khajiit and Argonians had a few different dialogues too?). Then there were also a few extra lines for vampire characters in Greymoor - but it was only extremly rare, which I really consider a missed opportunity.
