For years and years we always used the word Breeds. Even in the books ingame you can see the word Breeds for their description. Not Furstock. Where did the word Furstock even come from. It sounds weird and wrong.

Actually you are first person I ever heard that used this term... So my guess is it is not that often used term or you just met bad people or people just roleplaying enemies of Khajiits.
For the matter I call Khajiits "breeds" sub-species or just type of Khajiit.
The difference here is a goat is a simple animal, while all the Khajiiti furstocks are 100% sentient, self-aware, cognizant individuals who can speak and are capable of consent and all that, regardless of their shape or size.
