Jewelry enchants can be enchanted with fire resistance. Otherwise rolling a Dumner is an Option. Finally, there is a crafted set that gives you a bunch of resistance to the element you were last hit by for a few seconds.

1H&S ability absorb magicka would heal you and absorb the damage. If you use your crystallized slab as a warden that would take care of it. Trial by Fire is the set that will give resistance to the element you've been hit with, it's in wrothgar. Don't know your CP situation but ironclad will reduce its overall direct damage and all damage you take, elemental defender would also reduce the elemental side of the damage.
