I'd use Eternal hunt or shacklebreaker for pvp

you should have one set for penetration like night mothers or spriggans or two fanged snake. one for damage/ sustain like vicious ophidian or hundings rage.

you should be aiming for 2 kraghs or velidreth, 5 two fanged snake, 5 vicious ophidian

I think you need both. Night mother gaze when you are solo / in a 4 men dungeon. Hundings Rage in 12 men groups where someone else is wearing Night Mother Gaze or where penetretion is already at cap.
Couple them with Two Fanged Snake. If you can't get Two Fanged (it drops in Sanctum Ophidia only), look for Spriggan.
If you struggle with sustain, you can switch NMG or Hunding with Vicious Ophidian (it drops in any Trial) or Bone Pirate's Tatters. The latter requires the "Dubious Camoran Throne" drink, while the first works with any food (Garlic Cod with Potato Crust for Max Health / Max Stam, Dubious Camoran Throne for Health / Stam / Stam Recovery, Orzorga's Triple Trifle Pocket for Max Health / Max Stam Regen)

For my overland questing/adventuring Stam NB thief, she is wearing 5 Hundings, 4 Nightmothers Gaze, 3 agility jewellery.

Because none of the set bonuses (apart from agility) provide any additional stamina, I have divines on all pieces, and then went for the Tower Mundus (max stamina) to give me that extra boost.

Stats - 64 points in Stamina, 34K Max stamina, 2920 Weapon Damage, 1300 Recovery, 71% Crit.

Go spriggan and hundings rage. You can use blue spriggan jewelry it's cheap, and two pieces of divine spriggan armor should be pretty affordable.
