It's supposed to be released today 21st, but still nothing in the store. At what time does the store get updated ?

Yeah, I think that this is right. They do it mid-morning, Eastern Time, on the day it is released. Someone has to be in the office to press the button, I guess, and these people work normal business hours on weekdays.
