I guess I'm the only person who doesn't care for spellcrafting. Seems like a great way to make everything generic.

you are not alone - spellcrafting would be a disaster for the game IMO.
With spellcrafting you take the size of balance packages down to single spell... with obvious consequences.

Existing sets or future sets.... if crafted jewelry isn t set-possible it wont be used by the majority of the gaming public. Same way the cool end-o-quest gear stuff isn't used. See anyone running around in the accumulated Queen's armor set gained thru the AD quest line? No,. Same with the various ordinator pieces. BC they aren't sets.
if it is set possible, even with "only future sets" as some form of bizarro compromise that accomplishes nothing my argument stands.
Most people want Jewel crafting to get to use it on crafted sets. if you see it for any other reason, you IMO are in the minority and a "non-set" jewel craft system wont be of much use to many.
if your position is to not have it usable on set peices, you should state so explicitly not just as a vague unspecified perhapsish question. Then see how many people are all-in for non-set jewel crafting.
