boss fight dynamics

Is there a particular reason why boss's are always immune to things like stun, disorient, slow, etc...
IMO there should be a 1% or 10% chance to apply an active effect style debuff to the boss. We don't see things like the bosses stam /magic bars so what if the boss was running low from doing x type of attack we should be able to take advantage of that factor.
The only thing is many bosses don't have a myriad of attacks. There are maybe 2-3 & those are very repetitive. Each trial boss IMO should have at least 5 different attacks and some type of ultimate during an enraged stage/moment. The attacks should also be more random not in a predictable pattern.
Thoughts?

Well... because then they would just be stun locked until they were dead. Each player would just rotate their own stun or hold in, one at a time.

With programming, there is no true randomness. You can widen the choices as much as you want, and we'll still be able to predict what they will do. Give them 20 attacks, and we'll still be able to come up with ways to predict it, especially with add-ons.

I understand there is no true randomness, I've programmed a decent amount myself. What I'm saying is that the RNG function has more randomness than the current boss fights. I don't have any problem with predicting things, it's when they are TOO predictable such as the current state is when I bang my head on the wall.
Regarding the stun comment, I meant provide a CHANCE we could stun them during a certain situation, & you could always provide limitations around that like "you can only stun / slow a boss after he does x attack & only between 30-20% health because below 20% is enrage mode"; or something
