It all depends on player skill and character build. Any class can be sufficient at 1v1 or 1vX. Simple YouTube searches can provide you with many videos of all classes being able to accomplish both feats.
To answer both of your questions separately;
Skilled Nightblades can easily 1v1 and/or 1vX.
Skilled Templars can tank through damage of 5 players, while still dishing out damage. Any 1v5 scenario is tough regardless of skill and build. I wouldn't expect even the best of players to come out on top 100% of the time when out numbered like that.
