My alts honestly. I love to make up back stories for them, and interact with the game world like they would. It keeps things a little more interesting, though the stagnant endgame needs more content . I just wish I had more character slots

I've been having consistently less fun each time I get on to play, but I've wrote it off as just being bored with questing and maybe I'll get over it. Here I am, 90 quests later (just finishing up Pact Hero, and I've already done Dominion) and I can't even bring myself to do another quest. Thought maybe PvP would be cool, but all of the servers on Xbox are either consta-locked or they're so one-sided you can't go into them and do anything.
So the question is this: Has anyone gone through this, found something to make it worth, and kept playing or is this where everyone else is quitting too?

If you go through and try to complete every single quest it will get like that. Thats the life of anyone trying to be a completionist in a very large game. When I level alts the only quests I do the whole time are the main quest, fighters guild, mages guild, caldwells silver/gold and Craglorn quests. Craglorn's not necessary but I enjoy them because they are a challenge solo (when possible). This keeps the quests to a minimum. They can become mind numbing. You'll do more running around than actual playing. The delves, dungeon, anchors, world bosses, etc are the real fun for me. Basically just try to hit all the points of interest in each zone and only do the necessary quests. Mix in pledges (lvl 45 min) and PvP also.
After that you should be close to endgame and a whole new set of challenges open up.
honestly your best bet is to play some single player games you'd be interested. After a while you'll prob find you don't even want to play ESO anymore.
