Been playing ESO since Xbox One release and my inventory is starting to get stacked up, is there any reason to keep trophies (both public dungeon ones and monster ones?).

VictoriaRachel✭✭✭The ones that are dropped by monsters can be used, and then give credit against an achievement. Once you have one of those used it will not let you use duplicates and you can vendor them.
Those from public dungeons only do cool visual effects on your character. They are great fro roleplay or messing about. If you are not the sort of person that goes in for random visual effects though they can be destroyed (unfortunately not vendored).0
