XBox: Megaserver linked to region?

Can I freely choose which megaserver I want to play on? Or is it linked to the region my xbox live account is set to?

This wasn't shared but there are probably regional limitations and exceptions that apply.

BUt there could be only two servers but I seriously doubt it
Edit: I'm guessing based on other online games that apply regionally like Neverwinter

Yes, players will be able to switch back and forth between the North American and European megaservers at will on the PlayStation 4 and Xbox One. Please note that characters are bound to the server on which they are created.

The Elder Scrolls Online: Tamriel Unlimited is not region-locked. All players have access to both the North American and European Megaservers

Since I am doing a character transfer from Mac EU, will those chars be automatically be transferred to the EU Xbox server?

If I am a European player who plays on the North American server on PC/Mac, will I be able to purchase a console transfer to the European console megaserver

No. When a player purchases a console transfer, all their characters are moved to the same console megaserver that their PC/Mac characters were on.

For example, if a player with PC/Mac characters on the European megaserver purchased an Xbox One console transfer, their characters would only be transfered to the European Xbox One megaserver.
