In my opinion, it's not worth it.
The other way around for those tankier berserkers, sure, 5 pieces of heavy for tanking and 2 pieces of stamina to reduce costs a bit and get some minor crit bonus, but the other way around is simply not efficient. Heavy armor has literally nothing to offer for damage dealers, now that even the pathetic 0.5%/piece bonus to weapon damage (or what was it) was replaced..

I disagree. With the right set bonuses, enchants, and constellations, you can easily make up for the loss of the extra 2 pieces of medium armor. For example, I run 5 medium and 2 heavy armor pieces (chest and legs) using 3pc Dreugh King and 5pc Hundings (with Shadow Walker rings). Dreugh King's bonus to damage is excellent, plus it provides extra armor. I then put as many points as possible into a stamina cost reduction constellation. To me, that trade-off is worth it.

7 medium and 2 daggers 1 bow, wear 3 pieces of 3 diff sets, u can get up to 3rd bonus on everything if u wear dual weapons, thats absolute best dps and crit rate

You are looking at ravager's proc BEFORE the 1.6 stats increased. It adds 607 weapon damage now, plus 173 constant weapon damage.
Also you should be running Siphoning Attacks + caltrops (on your off bar), meaning ravager proc is always up.
Its kind of baffling to me more people don't run this set up, but hey, I've been a stamina 2h nb from the get go, so meta is still catching up I suppose.

I'm playing around with 7MA in PvE and 5MA/2HA in PvP. So far I would agree to the poster above who said that the 5/2-Setup is unnecessary for PvE. In PvP I'm still undecided but seriously consider staying with the 5/2 because of the added survivability. This way I survive for 5 seconds instead of 3, meaning I can fire of one more skill.
Can't help you there - never managed to get Undaunted skill line high enough for the passives. My very scarce playing time is used almost exclusively for PvP or leveling alts with my wife. But the Undaunted passive is apparently very, very strong. Many go helmet/shoulders and use the undaunted sets for the 1/1-part of the 5/1/1 setup. Me personally, I go chest/leg heavy, because that has the largest absolute benefit of all pieces.If it does indeed grant more benefits in PvP that would be pretty cool. As for the change out in PvP: Except for the shadow walker rings, I change out every single piece of equipment in PvP, even if I use the same weapon/armor-type in the respective slot...
