I just crafted a basic 2H battleaxe and cannot reproduce this. Are you using as specific set/axe?
Edit: Ok, now I can and I can re-produce it and with a 2H Maul too. What appears to be happening is the weapon animation going off screen with the larger weapons is pushing the player out of 1st person view to 3rd person in order for the full animation to play.
There does seem to be an avenue that can alleviate the issue in the short term which is why I couldn't reproduce at first, but not fix it outright - as it's an obvious bug. Having the angle of the camera slightly down from center seems to result in this happening a lot less, but it does also seem dependent on the size of the mobs hitbox and therefore your distance from the mob.
In short: The animation file changes seem to be causing the full animation to play, and when in 1st PoV, that means forcing a push to 3rd PoV so the file can play out. 1H don't seem to suffer as their animations are smaller in distance the weapon moves @ZOS_Kevin.
Oh and @Kappachi: Yes, it's jarring as hell. As someone who has vision issues that would drive me insane very quickly. It's not on the known bugs list either.

known bug list has something to do with 2H weapons but it isn't very specific and it said those animations are disabled but it doesn't seem like these animations that cause the force out to third-person got hotfix disabled, so not sure if they're aware of it.
yea; I tend to play in first person exclusively when it comes to overland, because the overland is too easy to not have to worry about any kind of mechanics & I like to immerse, including base game dungeons, for dlc dungeons/veterans/etc i go exclusively third person so it doesn't affect that, 100% affects singleplayer play though and makes me not want to use it at all right now...
